The process of salting a fresh skin consists of spreading salt grains over the surface of the skin, then leaving it for as long as necessary to dissolve and penetrate into the skin. The process helps to reduce bacterial activity in the skin during drying, which preserves the skin.
These fresh skins are always sourced in accordance with AENOR certification, which defines 'animal welfare' as a situation in which an animal is healthy, comfortable, well fed, and does not suffer from pain, anxiety or any other unpleasant conditions. The certification stipulates that, in addition to constituting good farming practice, ensuring an animal's welfare requires that its health be monitored so as to prevent illness. Finally, the animal must be slaughtered in a stress- and pain-free way.
